Blackberry Mojito/Nojito

About the recipe
In this recipe little batch wild blackberry syrup replaces the sugar that you'll find in a classic mojito recipe.
Blackberries go well with white and dark spirits, so you can choose white or dark rum for this recipe. If you prefer a mocktail, leave out the rum and adjust the lime juice, mint, syrup and soda to taste, or source a non-alcoholic rum alternative, of which there are plenty to choose from.
The recipe requires you to pummel the mint, berries and lime to release the flavours. You can do this using a muddler, a pestle or even a wooden spoon. (Using a cocktail shaker or sturdy jug for this step can help to avoid glass breakages!)
Ingredients
A handful of fresh blackberries, if in season.
A handful of fresh, torn mint leaves.
3-5 lime wedges.
25-50ml little batch Wild Blackberry Syrup.
75ml - soda water.
Ice.
If making a cocktail -
50ml quality light or dark rum.
If making a mocktail -
You could replace the rum with a non-alcoholic alternative e.g. Myth, Dead Man's Fingers, Caleno Dark & Spicy - or simply leave out.
Garnish ideas:
Lime slices, fresh or frozen blackberries, fresh mint leaves, edible flowers.

Method
Add blackberries, mint leaves and lime wedges to a tumbler and muddle together
Pour in the blackberry syrup, rum or equivalent (if using), soda water, and give it a good stir.
Taste for sweetness - add more syrup if you like it a little sweeter, add more lime if you like it more...limey!
Garnish with lime slices and a sprig of fresh mint or berries.
