Honeysuckle & Hibiscus Cooler

One to prep ahead - the hibiscus infusion takes 5 minutes to prepare and 8 hours to develop.
The mocktail then takes just 5 minutes to make.

About the recipe

Both the colour and flavour of this mocktail are divine! It’s a super stylish mocktail that's instantly refreshing. Try adding gin or vodka if you want to make a cocktail instead, but to be honest, you don't need alcohol for a drink that tastes this good!

  • 15g - 20g dried hibiscus, to make a cold tea infusion *

  • Ice

  • 25ml little batch Honeysuckle & Hibiscus Syrup

  • Half a juicy lime

  • 75-100ml soda / sparkling water

  • Garnish ideas: fresh or dried honeysuckle petals, dried hibiscus or edible garden flowers, lime wheels.



*This will make one litre of hibiscus tea - for each drink you'll use 150ml of hibiscus tea.

Method

This mocktail is made in two stages - the first to be prepared a day ahead.


Stage one - prepare the hibiscus tea


  • Prepare a cold hibiscus tea infusion by adding the dried hibiscus to a litre jug of cold, fresh water, give it a swirl and leave it in the fridge overnight (or at least eight hours).

  • When ready, sieve out the hibiscus. There will be plenty of flavour left in the petals so use these to make a hot tea, or leave to dry and use as a garnish for your mocktail.

  • Keep the hibiscus infusion in the fridge until you intend to use it - it should be fine for up to five days.

  • A litre of hibiscus tea infusion will be enough for six mocktails.



Stage two - make the mocktail


  • Add ice to a glass.

  • Pour in the Honeysuckle & Hibiscus Syrup.

  • Squeeze in the lime juice.

  • Add around 150ml of the hibiscus tea

  • Top with soda or sparkling water.

  • Stir, garnish and enjoy!
